About the role

The Chef / Cook position will be required to prepare and serve exceptional quality food through this iconic and historic venue. This is a great opportunity to expand your knowledge of local produce and contribute to the rebuilding and recovery process of Binna Burra Lodge. Evening and weekend work is essential.

Skills and experience

Cooks required skills and experience;

  • Skilled in preparing food for cooking and adding appropriate seasoning
  • Strongly familiar with different types of meats and vegetables and their cooking times
  • Highly experienced in performing food quality inspections to ensure that all food items conform to hygiene standards
  • Well-honed artistic skills aimed at arranging and presenting food in a manner pleasing to the eye
  • Solid know-how of preparing different types of meats for boiling, frying and steaming
  • Competent at mixing the right amount of ingredients according to weight and type
  • Special talent for preparing different types of cuisines, relishes, and salads
  • Track record of following best hygiene and sanitation practices aimed at providing quality food services
  • Absolute flexibility aimed at trying and testing new recipes to add new items to existing menus
  • Committed to maintaining a clean kitchen and work area

Binna Burra Kitchen @ Headmasters Cafe is located in the Gold Coast Hinterland and is a 30 min drive from Nerang, 60 mins from Surfers Paradise, and 90 mins from Brisbane, through scenic Beechmont. Free on-site parking is available for all employees. No public transport.

About the role

This position is suited to a hands-on individual, with strong organisational and communication skills and previous experience in restaurants and/or cafes.

You will be required to provide the highest standard of leadership, quality, and attention to detail through all phases of service to ensure an impeccable dining experience for every guest.

You will be required to possess the following attributes:
  • Previous supervisory experience in a cafe.
  • The ability to quickly master all aspects of the food, wine, and bar menus to guide each guest through their own unique dining experience based on individual taste preferences.
  • Maintain poise and focus under pressure allowing for an efficient, error-free job.
  • Possess strong interpersonal skills resulting in outstanding communication, teamwork, flexibility, and cohesiveness with fellow co-workers.

Housekeeping/Public Areas Attendant

About the role

We are currently seeking enthusiastic and hard-working individuals to join our Housekeeping team on. This role is very physical. The hours on offer are spread across a rotating 7-day roster with day shifts commencing between 6-9am. Weekend availability is essential to be considered for this role.

An overview of some of the tasks you will be required to complete are;

  • Cleaning all sky lodge rooms, as well as campground facilities to high level.
  • Ensure all guest common area toilet and shower facilities are clean and smell fresh.
  • All common area toilet and shower facilities to be fully stocked with bath mat, toilet paper and hand wash.
  • Ensure all internal and external public area tiled floors, corridors are swept and mopped, and carpet and stairs are vacuumed and swept daily.
  • Ensure window sills are wiped and all windows are cleaned using window cleaner (excluding windows that require specialty cleaning i.e. equipment & ladders).
  • Dust and wipe walls, doors, and tabletops, walls to be kept mark free, all doors to be washed down as necessary.
  • To follow and complete public area cleaning daily checklists.
  • Understand all functions happening at the Lodge and provide cleaning at time-critical points.

To act upon guest requests and special requirements where necessary.

  • Any maintenance to be reported to the housekeeping manager.

To pass on all information relevant to all public areas to the supervisor, e.g. maintenance issues, special requirements and requests, etc.

  • Follow procedures for all waste disposal and recycling.
  • Pass on any personal requests or preferences from guests to your supervisor.
  • Undertake other duties, which may be allocated from time to time, as requested by your housekeeping supervisor or designated i.e. room cleans, deep cleans.
  • Report to reception any lost and found articles.

Skills and experience

This is a multi-skilled, multi-outlet position and applicants must be able to demonstrate the ability to:

  • Previous experience in a similar role with an Eco-friendly or remote location hotel.
  • Demonstrated ability to work independently, with excellent time management.
  • Previous chemical handling experience.
  • Well presented with excellent communication skills (both written and verbal).
